I suspect the validity of the market research on this issue. Not that there is any problem with the surveys - just that the respondents know what they 'should' say and want to give the 'right' answer. As with many of the surveys on issues related to the environment, respondents express concern about the problem but when it comes time to change their behaviours they often do not act if there is a personal cost.

I think that the practical reality (as expressed in 'Skewed View from Beverly Hills') is that, unless sustainable food becomes cost competitive with 'industrial' food, the vast majority of people who are under financial pressure and for whom food is a commodity will continue to choose the cheaper forms of 'industrial' food. The question then becomes can sustainable food be cost competitive with industrial food?
